Piña Colada Chia Seed Pudding in 3 Steps

Easily one of the best summer time snacks ever! Just mix and pour into an easily transportable mason jar!

materials

  • Pint size mason jars

  • Fridge

ingredients

  • 2 tbsp chia seed

  • 1/2 cup coconut milk

  • 2 tbsp maple syrup

  • 1 tsp vanilla extract

  • Coconut shavings

  • Purée pineapple

  • Pineapple chunks

  • Mint

Recipe

Step 1

Mix the chia seed, coconut milk, maple syrup, vanilla extract, and a sprinkle of coconut shreds until smooth.

Step 2

Refrigerate overnight (3 hours at least).

Step 3

Add purée pineapple, pineapple chunks, and garnish with mint. Enjoy!

TIP: Mix thoroughly before eating.
