Homemade Marshmallows in 10 Easy Steps!
I've made this recipe every Christmas since K and I got married and it's one of the few things he ever asks for and it's become a holiday tradition!
Once you've had home made marshmallows you'll never want the store bought ones again. Pop them into hot chocolate, make s'mores with them, or even package them up as gifts. It's incredibly easy to make and I'll share some tips that will help make this process smoother!

Ingredients
2.5 tbsp of gelatin
1 cup of water
1/3 cup of corn syrup
2 cups of sugar
1/4 tsp of salt
1tbsp vanilla extract
Powdered sugar
Cornstarch (optional)
Tools
Cooking oil spray or butter
Pan or tray
Tin foil
Stand mixer
Sauce pan
Cookie cutters (optional)
Recipe
Step 1
Line a pan or tray with tin foil and spray with cooking oil or butter.
TIP: Coat the sides and the bottom very well to ensure that it'll pop out easily!
Step 2
Bloom 2.5 tbsp of gelatin to 1/2 cup of water and let it sit in your stand mixer
Step 3
In a sauce pan on high heat, combine 1/2 cup of water, 1/3 of corn syrup, 2 cups of sugar, and 1/4 tsp of salt.
TIP: Try to pour in the centre of the pan and not touch the sides. Don't stir it. Wait for it to boil and bubble for 7 minutes.
Step 4
Break up gelatin and add syrup mixture slowly and carefully.
Step 5
Gradually increase speed on your mixture to high.
Step 6
Mix on high for 10 minutes but stop when your mixing bowl starts to feel barely warm.
Add a tsp of vanilla extract near the end of mixing. It will look a bit sticky like so!
Step 7
Quickly transfer marshmallow mixture into oiled pan and smooth out. Then dust powdered sugar on top!
TIP: Don't try to scrap everything out. By the time you clean your mixing bowl, your mixture would have cooled to the point where you can't smooth it out. Your primary goal is to transfer the mixture into the pan.

Cover and let rest overnight.

On the next day, you can cut them into any shapes and toss them in a cornstarch and powdered sugar mixture.
TIP: Use fun cookie cutter shapes to add some whimsey. Want to take it up a notch? Use melted chocolate to create fun designs like snowmen faces!

Store in an air tight container to enjoy with your next cup of hot chocolate!

These marshmallows should last about two weeks when stored properly!
